This really is one of the contestants' favorite recipes - they just love it and make it in bulk at the ranch. Why? It's versatile, super-easy to make, affordable, low in calories and very healthy! Oh, and it's absolutely delicious! You still get a little taste of the yolk with this recipe. And yes, although the yolk has cholesterol, research suggests that it's saturated fat more than cholesterol in our food that raises our cholesterol levels. One other thing to consider is that yolks are the richest source of choline - an important nutrient dubbed "brain food" that could also help lower breast cancer risk and numerous other diseases. This isn't a license to go yolk-crazy, but it's just a friendly note to say yolks are okay in moderation.
You can make a batch of the Egg White-ish Salad today, have a delicious serving on top of a bed of greens for lunch, then save the rest for a snack!
Ingredients
12 hard-boiled egg whites
3 hard-boiled egg yolks
2 tablespoons light mayonnaise (canola/olive oil-based preferred)
1 tablespoon deli mustard
1/2 teaspoon paprika
Optional: 1/2 cup fresh chopped red onion or Chives
Instructions
Grate eggs into a bowl. Mix in light mayonnaise, mustard and optional onions/ chives. Top with paprika. Enjoy!
