Quinoa & Turkey Lettuce Wraps
Made of nearly 95% water, lettuce is a great veggie to eat to help increase your water intake! These lettuce wraps are a healthy, low-fat and low-carb alternative to a traditional wrap, with just as much flavor. Try this delicious recipe from the kitchens of The Biggest Loser Resort at Fitness Ridge:
Ingredients:
15 lettuce leaves
2-½ cups quinoa, cooked
1 pound cooked white ground organic turkey
¼ cup pine nuts
⅛ cup fresh lemon juice
¼ cup green onions, chopped
¼ cup carrots, shredded
¼ cup dried cranberries
½ teaspoon salt
¼ teaspoon black pepper
5 Tablespoons hoisin sauce (available at local grocery store)
Directions:
Place 3 lettuce leaves on each plate. Mix quinoa, ground turkey, pine nuts, green onion, carrot and cranberries together. Place 2 ounces of the mixture onto the lettuce leaves. Drizzle equal amounts of hoisin sauce onto each cup. Garnish with fresh chopped green onion.
Serves 5; serving size: 3 lettuce cups
