Q: I would like to be able to make fun, easy finger type foods for my kids and for myself. I am a carbs junkie and want to be able to make some that will be beneficial.
A: You're clear on what you want - "fun, easy finger type foods for my kids and myself." Do you like sweet potatoes? If so, try one of my favorites:
Oven Roasted Sweet Potatoes
Clean sweet potato, quarter, and place on a baking sheet. Coat surfaces evenly with olive oil. Sprinkle rosemary, garlic, salt, and pepper over potato. Broil for 20-25 minutes or until cooked and lightly browned.
Yield: 2 Servings
