4 ounces cod
1/2 red pepper, sliced
2 cups sliced yellow and green zucchini
1/2 cup chopped bok choy, (cut into 1/2-inch pieces)
1 teaspoon extra virgin olive oil
Siracha Hot Sauce (optional)
Spray skillet with cooking spray. Coat both sides of cod with Cajun seasoning. Put cod in pan. Add 1/4 lemon, juiced. In another pan, add olive oil. Then add veggies. Saute until al dente.
Put lines of Siracha on the plate. Add cod to plate. Add remainder of lemon juice. Add veggies.
