Italian Chicken Skillet
Ingredients
- cooking spray
- 1 cup onions, chopped
- 4 cups zucchini, sliced
- 2 cups broccoli, chopped
- 3/4 pounds precooked rotisserie chicken breasts, cut into cubes
- 4 cups spinach
- 2 cups red kidney beans, drained and rinsed
- 2 cups marinara sauce
- 2 ounces mozzarella cheese, part-skim
Preparation
Spray large pan with nonstick cooking spray and heat over medium-high heat. Cook the onions until tender, about 3 to 5 minutes. Add zucchini and broccoli and cook for 2 minutes, until slightly softened. Stir in chicken, spinach, beans and marinara sauce and cook until spinach is wilted. Stir in mozzarella and cook until heated thoroughly. Remove from heat and serve.

ROASTED CAULIFLOWER
Ingredients
- 1 1/2 heads cauliflower (about 3 pounds), cut into florets
- 2 tablespoons olive oil
- 1/2 teaspoon salt
Preparation
Preheat the oven to 375 degrees. Place cauliflower into a 9x13 inch-baking dish, toss with the olive oil, and sprinkle with salt. Cover the dish and bake for 30 minutes. Remove the cover, stir and cook for 30-40 minutes more, until vegetables are tender and nicely browned, stirring occasionally.
