
12 Lamb chops
½ C Olive oil
5 Cloves garlic, minced
¼ C Mint, finely chopped
¼ C Rosemary, finely chopped
Salt & pepper
· Mix all ingredients together in a zip-lock bag and marinate for at least 1 hour or over night
· Over medium-high, heat oil in a sauté or grill pan
· Sear lamb lollipops on both sides about 2 minutes per side
· Place in 400 degree oven for about 5-10 minutes to finish cooking
· Serve over fennel salad
Fennel Salad
1 Fennel heart, sliced very thin
1 Red onion, sliced thin
2 C Baby heirloom tomatoes, halved
¼ Mint, chopped
¼ C Parsley, chopped
2 Avocados, cubed
½ C Olive oil
Juice of 2 lemons
Salt & pepper
· Mix all ingredients together in a bowl
· Serve under lamb lollipops
