
Ingredient: (serves 4-6)
- 4 to 6 NY strip steaks
- fresh thyme
- fresh rosemary
- 2 sticks butter
- garlic
- 6 large russet baking potatoes
- 1 quart heavy cream
- wasabi powder
- salt
- white pepper
Method:
- Trim all excess fat from the steaks.
- peel potatoes and place in pot with salted water, bring to low boil and cook potatoes until tender.
- strain the potatoes, mash in ricer into bowl of mixer, heat cream at medium heat until hot, mix potatoes with whisk attachment at low speed. Add cream and butter in small batches until potatoes are thick. Add salt, pepper, and wasabi powder to taste.
- add 1 tbsp of oil to pan at high heat, salt and pepper the steaks. Place in pan, add 1 tbsp of butter per steak, fresh rosemary and thyme, and 1 clove of garlic per steak.
- sear steaks and cook until they reach medium rare, about 5-7 minutes. Let rest for 2-3 minutes.
- serve with wasabi mashed potatoes.
