
Serves 4-6
2 pds Sushi grade Ahi tuna,chopped tartar style
1 avocado, small dice
1/2 small red onion ,small dice
1/2 cup finely chopped cilantro
1 piece scallion, thinly sliced
2 Tb. mayonaisse
1 Tb. soy sauce
1 tsp. toasted sesame oil
1/2 tsp chili oil
salt and pepper to taste
Add all ingredients in a bowl except for the avocado and mash together with your hands. When mixed add the avocado and gently toss. Place in the refrigerator cover with plastic wrap.
Miso Dressing-
1/2 cup red miso paste
1/4 cup seasoned rice vinegar
1/4 cup sesame oil
1/4 cup soy sauce
black pepper
In a blender or with an inverted blender, mix the 5 ingredients together until smooth. If too thick add a little more soy sauce and seasoned rice vinegar.
Garnish-
2 oz. caviar of your choice
micro cilantro
Presentation-
Using a ring 2 inchs in diameter, fill with the tartar. If you don't have a ring use a 3-4 oz. ramekin and carefully invert onto a beautiful plate. Repeat 4-6 times. Reserve the rest (if any) for the next day and make tuna patties. Drizzle the miso mayonaisse evenly around the tuna tartar and garnish with caviar and micro cilantro greens.
